Xue-Jiao XU, Yu-Shu CAI, Shu-Hui CHEN

Chen Shu-Hui and friends founded Chuan-Long Old House Tofu when she moved to Gongguan, Miaoli. To preserve and revitalize the old house on the canal, Chen’s calling to insist on using Taiwanese soybeans to make bittern (nigari) soy products has continued to this day. Chuan-Long Old House Tofu is now managed by Chen You-Rui, who also moved to Miaoli. Written on the announcement board outside the store is the day count of the tofu and represents the determination to reach 3,000 days. This dish is presented by food designers Xu Xue-Jiao, Cai Yu-Shu, and Chen Shu-Hui using a variety of local Hakka village produces, showcasing the taste of local ingredients and telling visitors stories of the 180-year-history of the produces along the watershed.
